“Serving fish soup on Christmas Eve is one of the most beautiful and most interesting mayoral duties. Last year I fulfilled this obligation for the first time and I was pleasantly surprised how many Prague people supported this tradition. I’m pleased that serving Christmas Eve soup has become a custom for Prague people and many of them come to taste the Mayor’s soup and enjoy the seasonally-decorated city centre,” said Bohuslav Svoboda.

An Old Bohemian recipe

The traditional dish, which has been cooked this year according to a special recipe, has been prepared in a quantity equal to 2,000 servings. “This year we have cooked fish soup according to an old Bohemian recipe. It involves a strong stock made of fish heads, meat and vegetables. It was thickened with cream and it also has a drop of cognac in it. I hope everyone who visits the market on Christmas Eve will enjoy it,” said Daniel Prošek, director of the culinary division of the Taiko company, which organises the Christmas market in Old Town Square.
